This is a bag of "Samp" from the brand Iwisa, one of South Africa's most iconic and beloved food brands. Samp is a traditional Southern African food, consisting of dried corn kernels that have been stamped and crushed, but not as finely as maize meal. Unlike maize meal, samp retains large, coarse pieces of the corn kernel. Before cooking, it must be soaked for several hours (or overnight) and then slow-simmered until tender. It has a hearty, chewy texture and a delicious, earthy corn flavor.
