Please note: The hard, dried seeds must be soaked in water for several hours or overnight, and then simmered until tender before use. When cooked, they have a creamy, starchy texture and a mild, nutty sweetness. They are a key ingredient in many traditional sweet dessert soups ("tangsui"), such as "Snow Fungus and Lotus Seed Soup," as well as savory herbal soups.
